I started investigating and found a stone ground mill in Montana that I switched to probably about a decade ago, when I started making my own sour dough. With the food security issues now, I found that Montana mill had sold out. So I started looking again and found some spectacular mills, a few specializing in ancient grains like einkorn. If anything, I hope this situation brings out a return to local food systems, a support for local food businesses (from farms to restaurants) and return to self-sufficiency (making and growing your own food).
